Prepare the Steak

Season the rib eye steaks generously with salt and black pepper on both sides.

Heat the Pan

In a large skillet or grill pan, heat the olive oil over medium-high heat until shimmering.

Cook the Steak

Add the seasoned rib eye steaks to the pan and cook for 4-5 minutes on each side for medium-rare, or until desired doneness.

During the last minute of cooking, place Swiss cheese slices on top of the steaks and cover the pan to melt the cheese.

Remove the steaks from the pan and let them rest for 5 minutes before slicing.
