Prepare the oysters
Rinse the oysters under cold running water to remove any sand or debris. Pat them dry with a clean paper towel.

Make the batter
In a mixing bowl, combine the rice flour, cornstarch, baking powder, salt, and black pepper. Gradually add water, whisking until a smooth batter forms. It should be thick enough to coat the oysters.
Frying

Heat the oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

Fry the oysters
Dip each oyster into the batter, allowing excess to drip off. Carefully place them in the hot oil, frying in batches to avoid overcrowding. Fry for about 2-3 minutes or until golden brown and crispy.

Drain and serve
Remove the fried oysters from the oil using a slotted spoon and drain on paper towels. Serve immediately with your choice of dipping sauce.
