Rinse the tilapia fillets and pat dry. Cut into serving portions if whole fillets. Squeeze the juice of 1 lime over the fish, sprinkle a pinch of salt and 1/4 tsp black pepper; set aside to marinate 10–15 minutes in the refrigerator.

Peel the ginger and slice into 1/4-inch rounds. Smash the garlic cloves with the flat of a knife. Peel and quarter the onion. If using whole scotch bonnet, slit it lengthwise (keep seeds for more heat or remove for less). Reserve a few basil leaves for garnish.
Make the broth

Build flavor
In a large pot, bring 8 cups water or light fish stock to a simmer over medium-high heat. Add the sliced ginger, smashed garlic, quartered onion, and the scotch bonnet pepper.

Crush the bouillon cube between your fingers and add to the simmering pot (or add the equivalent bouillon powder). Add 1 tsp sea salt, 1 tsp ground black pepper, 1 tsp ground calabash nutmeg, and 1 tbsp whole or ground crayfish. Stir to dissolve and continue simmering gently for 10 minutes to infuse the broth.

Taste the broth and adjust seasoning: add up to 1/2 tsp more salt or a pinch more bouillon if needed. Keep the broth at a gentle simmer — you want aromatic flavor but not a rolling boil that will break up the fish later.
Cook the fish

Gently slide the marinated tilapia pieces into the simmering broth. Reduce heat so the broth is at a very gentle simmer. Cook uncovered for 6–8 minutes, depending on thickness, until the fish is opaque and flakes easily with a fork.

During the last minute of cooking, add the chopped basil/scent leaves and optional additional 1 tsp ground crayfish for extra depth. If you want a little oil sheen, stir in 1 tsp palm oil or neutral oil.
Finish & serve

Carefully transfer the fish pieces to a serving bowl or ladle fish into individual bowls, pouring hot broth over them. Taste the broth one last time and correct seasoning if necessary.
