Prep the okra and base

    Trim and grind okra

    Wash the okra, pat dry. Trim the tips and cut into 1-inch pieces. Place the okra in a blender with 1/2 cup of water and pulse briefly until coarsely ground — you want a slightly chunky but slippery texture, not completely puréed. Transfer to a bowl.

    Prepare aromatics and tomatoes

    Peel and finely chop half the onion (reserve the other half for braising). If using tomatoes, roughly chop them. Set minced garlic aside.

Make the egusi garnish

    In a small bowl, combine the ground egusi with 1 tablespoon of hot water to form a thick paste. Add 1/4 tsp salt and the optional cayenne. Mix until cohesive. Set aside.

    Heat 1 tablespoon of palm oil in a small nonstick pan over medium heat. Add a spoonful of the egusi paste and fry gently to form small golden crumbs (this creates a toasted garnish that will be sprinkled on the finished soup). Turn frequently to avoid burning, about 3–4 minutes. Remove and keep warm.

Cook proteins (if using)

    If using pre-cooked proteins (smoked fish, cooked beef, or shrimp), flake or chop into bite-size pieces and set aside. If using raw meat that needs cooking, simmer it in 1 cup of stock or water with half the chopped onion and a pinch of salt until tender (time will vary — 20–45 minutes). Reserve the cooked meat and 1 cup of the cooking stock.

Build the soup

    Heat the remaining 3 tablespoons of palm oil in a medium pot over medium heat. Add the remaining chopped onion and sauté until translucent, about 3–4 minutes. Add minced garlic and cook 30 seconds until fragrant.

    If using fresh tomatoes, add them now and cook down 4–5 minutes until softened. Add ground crayfish and stir to combine.

    Pour in the 3 cups of stock (including reserved meat stock if used) and bring to a gentle simmer.

    Stir in the ground okra and the remaining 1.5 cups of water (or adjust so total liquid is about 3–4 cups depending on desired thickness). Simmer gently for 6–8 minutes, stirring occasionally — okra will release its characteristic viscous texture. Reduce heat to low.

    Taste and add the seasoning cube, 1 tsp salt, and 1 tsp ground black pepper. Adjust to taste.

    Add the cooked proteins (smoked fish, beef, or shrimp) and simmer 3–4 minutes to heat through and allow flavors to combine.

Finish and serve

    Stir in the chopped spinach (or ugu/kale) and scent leaves or basil. Cook 1–2 minutes until wilted. Squeeze the optional lime half over the pot and stir.

    Ladle the okra soup into bowls. Sprinkle the fried egusi crumbs over each bowl as a garnish. Drizzle a little extra palm oil on top if desired. Serve hot with fufu, pounded yam, eba, rice, or your preferred swallow/starch.
