Cleaning and Parboiling

Prepare snails by thoroughly rinsing under cold running water. If using live snails with shells, remove from shells and discard any discolored or slimy parts. Rinse repeatedly until water runs clear.

In a large pot, bring 2 liters of water to a boil with vinegar (or lime juice), bay leaves and 1 tablespoon salt. This helps deodorize and tenderize the snails.

Add the prepared snails to the boiling water, reduce to a gentle boil, and parboil for 12–15 minutes (canned snails 5–8 minutes). Parboiling tenderizes the meat and makes it easier to absorb seasonings.

Drain the snails in a colander and immediately rinse under cold water to stop cooking. Pat dry with paper towels and set aside.
Seasoning Marinade

Place the parboiled snails in a mixing bowl. Add 1 teaspoon bouillon, 1 teaspoon ground black pepper, 1 teaspoon dried thyme, 1 teaspoon curry powder (if using) and 1 teaspoon salt. Toss to coat evenly.

Add half (about 3 tablespoons) of the vegetable oil and the minced garlic and grated ginger. Mix well and let marinate for 20–30 minutes at room temperature (or refrigerate up to 2 hours). This step allows flavors to penetrate the snail flesh.
Pepper Sauce and Sauté

While snails marinate, warm a blender with the roasted red bell pepper and the fresh scotch bonnet/habanero (remove seeds if you want milder heat). Blend to a coarse purée. If thick, add 1–2 tablespoons water to loosen.

Sauté aromatics
Heat the remaining 3 tablespoons vegetable oil in a large skillet or heavy-bottomed pan over medium heat. Add sliced onions and sauté until translucent and starting to brown at the edges, about 6–8 minutes.

Add the tomato paste to the onions and fry for 2 minutes, stirring constantly to remove the raw tomato taste.

Stir in the blended pepper mixture and cook for 6–8 minutes, stirring occasionally, until the raw pepper smell reduces and the mixture darkens slightly.

Taste the pepper sauce and adjust seasoning with a pinch of salt or an extra 1/2 teaspoon bouillon if needed.
Final Cooking and Garnish

Add the marinated snails to the pepper sauce, stirring to coat. Reduce heat to medium-low, cover partially, and simmer for 10–12 minutes so the snails absorb the sauce flavors, stirring every few minutes to prevent sticking.

Uncover, increase heat to medium-high and sauté for 2–3 minutes to reduce excess liquid and slightly caramelize the sauce onto the snails. Taste and adjust salt and pepper as needed.

Transfer to a serving plate and garnish with lemon or lime wedges. Serve hot as an appetizer, side or snack with fried plantain, bread or boiled yam.
