Prepare and parboil assorted meats
Rinse beef, goat meat and any tripe/kpomo under cold water. In a large pot combine the meats with 1/2 of the chopped onion (1 medium), 1 seasoning cube and enough water to cover (about 1.2 l included in ingredients). Bring to a boil, then reduce heat and simmer for 45–60 minutes until meats are tender. Skim foam periodically. If using smoked fish and dried prawns, rinse them separately and set aside to add later.

Add smoked fish and prawns
When meats are nearly tender (last 10 minutes), add the smoked dried fish and dried prawns to the pot so they soften and impart flavor to the stock. Continue simmering until everything is cooked and flavorful. Remove large bones from smoked fish if needed and flake gently into the soup when serving.

Prepare bitter leaf
Thoroughly wash the bitter leaf under running water to reduce bitterness. Rub and squeeze repeatedly in several changes of water (or blanch in boiling water for 1–2 minutes then rinse) until bitterness is reduced to your preference. Squeeze out excess water and roughly chop. If using ugwu or spinach, wash and chop as well.

Blend tomatoes and peppers
In a blender, combine the chopped fresh tomatoes, red bell pepper and scotch bonnet peppers with about 100 ml of water (from the 300 ml allocated). Blitz briefly to a coarse puree. You can also grate the tomatoes by hand if preferred.

Fry the pepper mix in palm oil
Heat the palm oil in a separate frying pan over medium heat until hot but not smoking. Add the remaining chopped onion (1 medium) and sauté for 2 minutes until translucent. Pour in the blended tomato-pepper mix and fry for 8–12 minutes, stirring occasionally, until the raw tomato smell reduces and oil begins to separate from the tomato. This deepens flavor and color.

Incorporate crayfish and locust bean
Stir in the ground crayfish (2 tbs) and ground ogiri/iru (if using) into the fried pepper mix and cook for another 2 minutes to release aromas.

Combine with stock and simmer
Transfer the fried pepper, crayfish and aromatics into the pot with the cooked meats and stock. Stir to combine. Taste the soup and add the remaining seasoning cube(s) if needed. Simmer together for 8–10 minutes to marry flavors.

Add bitter leaf and finish cooking
Add the prepared bitter leaf and optional ugwu/spinach to the simmering pot. Stir well, then cook for 5–8 minutes—long enough for the greens to be tender but still vibrant. Adjust thickness by adding up to the remaining 200 ml water if needed. Season with salt (1.5 tsp) and freshly ground black pepper to taste.

Taste the soup and adjust salt or seasoning cubes as needed. Add the flaked smoked fish if you removed bones earlier. Stir in the fresh basil or scent leaves if using and simmer for 1 minute. Turn off heat and allow the Bitter Leaf Soup to rest for 3–5 minutes before serving. Serve hot with fufu, pounded yam, eba, rice or your preferred swallow/starch.
