Prepare vegetables
Wash all vegetables. Core and finely dice the yellow and red bell peppers so they total about 1 cup combined. Peel and finely dice the onion to yield 1/2 cup. Trim ends of the zucchini and cut into 1/4-inch dice to make about 1/2 cup. Mince the garlic clove. If using large spinach leaves, roughly chop them; measure 1 cup packed.
Sauté vegetables
Place a large nonstick or well-seasoned skillet over medium heat and add 1 tablespoon olive oil (or butter). When oil shimmers, add the diced onion and bell peppers. Cook, stirring occasionally, until the onion is translucent and peppers begin to soften, about 4 minutes. Add the diced zucchini and continue to cook 2 minutes. Add the minced garlic and cook 30 seconds until fragrant. Stir in the packed spinach and cook until wilted, about 1 minute. Season the vegetable mixture with 1/4 teaspoon kosher salt and 1/8 teaspoon black pepper. Spread the vegetables in an even layer in the skillet and reduce heat to medium-low.

While the vegetables cook, crack 4 large eggs into a medium bowl. Add 2 tablespoons milk or half-and-half, 1/4 teaspoon kosher salt, and 1/8 teaspoon freshly ground black pepper. Whisk vigorously until yolks and whites are fully combined and slightly frothy.
Cook eggs with vegetables
Pour the whisked eggs evenly over the vegetables in the skillet. Allow the eggs to set undisturbed at the edges for about 20–30 seconds, then gently push set edges toward the center with a silicone spatula, tilting the pan to let uncooked egg flow into the spaces. Continue folding and gently stirring every 15–20 seconds until the eggs are softly set but still slightly creamy, about 2–3 minutes total depending on heat. Avoid overcooking; remove from heat just before fully firm.
