Base Overnight Oats
Combine dry ingredients
In a medium mixing bowl or a 16-oz jar, add 1 cup rolled oats, 1 tablespoon chia seeds and 1/8 teaspoon fine salt. Stir to combine so the chia and oats are evenly distributed.
Add wet ingredients
Pour in 1 cup milk and add 1/2 cup plain Greek yogurt, 1 tablespoon maple syrup (or honey), and 1/2 teaspoon vanilla extract. Stir thoroughly until the oats are fully moistened and the mixture is uniform.
Adjust sweetness and consistency
Taste the mixture and add an extra 1/2 tablespoon maple syrup if you prefer it sweeter. If you want a thinner consistency, add up to 2 tablespoons more milk and stir to combine.
Cover and chill
Cover the bowl tightly with plastic wrap or put the lid on the jar. Refrigerate for at least 6 hours, ideally overnight (8–10 hours) so oats soften and chia seeds thicken the mixture.

Prepare fruit
When ready to serve, wash the fresh berries and drain. Slice the banana into rounds. If using strawberries, hull and slice them. Pat fruit dry with a paper towel to avoid diluting the oats.
Assemble and garnish
Remove the oats from the refrigerator and give them a quick stir. If the oats appear too thick, stir in 1–2 tablespoons milk. Top the overnight oats with 1 cup mixed berries and the sliced banana. Sprinkle 2 tablespoons chopped toasted nuts and 1 tablespoon shredded coconut over the fruit. Drizzle an additional 1 teaspoon maple syrup on top if desired.
Serve or store
Serve immediately, or cover and refrigerate for up to 2 days. If storing, add fresh fruit just before eating to keep texture bright. Consume within 48 hours for best quality.
