Prepare flavored yogurt

In a medium bowl, add 2 cups Greek yogurt, 2 tbsp honey, 1 tsp vanilla extract and 1 tsp lemon zest. Whisk until smooth and evenly combined. Taste and adjust sweetness with up to 1 additional teaspoon honey if desired.

Prepare fruit

Wash all fruit. Hull and quarter the strawberries. Rinse blueberries and drain. Peel and slice the kiwi into rounds or half-moons. Slice the banana just before serving to prevent browning. Combine prepared fruit in a bowl and gently toss to distribute.

If you like macerated fruit: optionally toss the strawberries with 1 tsp honey and let sit 5–10 minutes to release juices before combining with other fruit.

Layer or bowl assembly

Divide the flavored yogurt between 2 serving bowls or jars (about 1 cup yogurt per serving). Spoon half of the mixed fruit over the yogurt in each bowl, reserving a little for garnish. Sprinkle 1/2 cup granola evenly on top of the fruit for each serving.

Scatter 1 tbsp chopped almonds and 1/2 tsp toasted chia seeds over each bowl. Drizzle each serving with 1/2 tsp extra honey or maple syrup if you want more sweetness.

Garnish each bowl with 2 fresh mint leaves and the reserved fruit pieces for an attractive finish.

Serving & storage

Serve immediately so granola remains crunchy. If preparing ahead, keep yogurt and fruit covered in the refrigerator and store granola/toppings separately in an airtight container. Assemble just before serving (up to 4 hours refrigerated for yogurt/fruit; granola up to 2 weeks).
