Heat 2 tablespoons olive oil in a large skillet over medium heat until shimmering.
Add 1 cup diced yellow onion and sauté 3–4 minutes, until translucent.
Add 1/2 cup diced red bell pepper and 1 cup diced zucchini. Sauté 5–6 minutes, stirring occasionally, until vegetables are tender and beginning to brown.
Stir in 2 minced garlic cloves and 1 teaspoon fresh thyme leaves; cook 30–45 seconds until fragrant but not browned.
Add 1 cup halved cherry tomatoes and 2 cups chopped baby spinach. Cook 1–2 minutes until spinach wilts and tomatoes release some juices.
Season the vegetable mixture with 3/4 teaspoon salt, 1/2 teaspoon black pepper and 1/4 teaspoon red pepper flakes (if using). Stir in 2 tablespoons chopped fresh parsley. Taste and adjust seasoning. Reduce heat to low and keep warm.
Scrambled Eggs
Crack 6 large eggs into a medium bowl. Add 1/4 cup whole milk, 1/2 teaspoon salt and 1/4 teaspoon black pepper. Whisk until fully combined and slightly frothy.
Heat a nonstick skillet over medium-low heat and add 1 tablespoon unsalted butter. Swirl to coat the pan and melt the butter without browning.
Continue folding gently and intermittently, lowering heat if eggs cook too quickly. Cook until eggs are soft, creamy and slightly runny (carry-over cooking will finish them). Remove from heat and stir in 1 tablespoon sliced fresh chives, if using.
Finish & Assemble
If grits have thickened while waiting, stir in 1 tablespoon olive oil or butter to loosen and bring back to a creamy consistency. Taste and adjust salt/pepper.
