Cheese Making Directions

1

Heat the Milk

In a large pot, pour in the gallon of whole milk and heat it over medium heat. Stir occasionally to prevent it from scorching. Heat until the milk reaches about 190°F (88°C).

2

Add Vinegar

Once the milk is heated, remove the pot from the heat. Slowly stir in the cup of white vinegar. You should see the milk curdle and separate into curds and whey.

3

Let it Sit

Cover the pot with a lid and let it sit for about 10 minutes to allow the curds to fully form.

4

Strain the Curds

Line a colander with cheesecloth and pour the curds and whey into it. Allow the whey to drain out. Rinse the curds under cold water to wash away the vinegar taste.

5

Add Salt

Once drained, transfer the curds to a bowl and sprinkle in the tsp of salt. Mix well to incorporate the salt evenly throughout the curds.

6

Shape the Cheese

You can either leave the cheese loose or press it into a mold to shape it. If pressed, wrap in cheesecloth and place a weight on top for about an hour.

7

Refrigerate

Once shaped, remove from the mold, wrap in plastic wrap, and refrigerate until ready to use.
