Method

For the Smoked Salmon Benedict

  1. 1

    Prepare the Ingredients

Gather all the ingredients for the smoked salmon benedict. Split the English muffins in half and toast them until golden brown.

  2. 2

    Poach the Eggs

In a pot of simmering water, create a gentle whirlpool and crack the eggs into the center. Poach each egg for about 3-4 minutes or until the whites are set but the yolks remain runny. Remove with a slotted spoon and set aside.

  3. 3

    Assemble the Benedict

On each toasted English muffin half, layer a slice of smoked salmon. Top with a poached egg, then drizzle with hollandaise sauce. Garnish with chopped chives and sprinkle crispy capers on top.

For the Breakfast Potatoes

  1. 4

    Prepare the Potatoes

Wash and dice the potatoes into small cubes. You can leave the skin on for added texture.

  2. 5

    Cook the Potatoes

In a large skillet, heat the olive oil over medium heat. Add the diced potatoes and season with garlic powder, paprika, salt, and black pepper. Cook for about 15-20 minutes, stirring occasionally, until the potatoes are golden brown and tender.
