Preparation Steps
- 1
Prepare the Cheeses
Slice the house-made marinated mozzarella, smoked mozzarella, and burrata into bite-sized pieces and arrange them on a serving board.
- 2
Roast the Tomatoes
Preheat the oven to 200°C (400°F). Place the tomatoes on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 20-25 minutes until they are soft and slightly caramelized.
- 3
Prepare Mixed Nuts
In a small bowl, combine your choice of mixed nuts. You can toast them lightly in a pan for added flavor, if desired.
- 4
Make Basil Oil
In a blender, combine fresh basil leaves with olive oil. Blend until smooth, then strain through a fine mesh sieve to obtain basil oil.
- 5
Prepare Fruit Compote
In a small saucepan over medium heat, combine fresh or frozen fruits (like berries or stone fruits) with a bit of sugar and cook until they break down into a chunky sauce. Let it cool.
- 6
Prepare Balsamic Reduction
In a small saucepan, bring balsamic vinegar to a boil, then reduce heat and let it simmer until it thickens and reduces to about half its volume. This should take about 10-15 minutes.
- 7
Assemble the Board
On a large serving board, arrange the cheeses, roasted tomatoes, and mixed nuts. Drizzle the basil oil over the cheeses and place small bowls of fruit compote and balsamic reduction on the board.
