Prepare the Chicken
Preheat your oven to 375°F (190°C). Take the boneless chicken breasts and place them between two sheets of plastic wrap. Use a meat mallet or rolling pin to pound the chicken to an even thickness of about 1/2 inch. This ensures even cooking.

Season the Chicken
In a bowl, combine salt, black pepper, garlic powder, and dried oregano. Rub this seasoning mixture all over the chicken breasts to flavor them well.

Bread the Chicken
Dip each seasoned chicken breast first into the egg wash, allowing any excess to drip off. Then, coat the chicken in gluten-free breadcrumbs, pressing down to ensure the breadcrumbs stick well.

Pan-Fry the Chicken
In a large skillet, heat olive oil over medium-high heat. Once the oil is hot, add the breaded chicken breasts to the skillet. Cook for about 4-5 minutes on each side, or until golden brown and cooked through. You may need to do this in batches.

Assemble the Chicken Parmesan
Once the chicken is cooked, transfer them to a baking dish. Spoon the plum tomato-basil sauce over each piece of chicken, then top with mozzarella cheese and fresh basil leaves.

Place the baking dish in the preheated oven and bake for about 15-20 minutes, or until the cheese is melted and bubbly.

Remove the Chicken Parmesan from the oven and let it rest for a few minutes before serving. Garnish with extra fresh basil if desired and enjoy!
