In a mixing bowl, whisk together the eggs, milk, vanilla extract, and ground cinnamon until well combined.

Soak the Brioche
Dip each slice of brioche bread into the egg mixture, ensuring both sides are well coated. Let the excess mixture drip off.

Cook the French Toast
In a skillet, melt 1 tablespoon of butter over medium heat. Add the soaked brioche slices to the skillet and cook until golden brown, about 3-4 minutes per side. Repeat with the remaining butter and slices.

Prepare the Caramelized Apples
While the French toast is cooking, peel, core, and slice the apples. In a separate pan, melt 1 tablespoon of butter over medium heat, then add the sliced apples and brown sugar. Cook for about 5-7 minutes, stirring occasionally, until the apples are tender and caramelized.
