    Begin by chopping the bacon into small pieces and the onion into thin slices. Finely chop the fresh sage and mint.

    In a large oven-safe skillet, heat the olive oil over medium heat. Add the chopped bacon and cook until crispy, about 5-7 minutes.

    Add the sliced onion to the skillet with the bacon. Cook for an additional 10 minutes, stirring occasionally, until the onions are caramelized and soft.
