Prepare the Ingredients
Begin by chopping the bacon into small pieces and the onion into thin slices. Finely chop the fresh sage and mint.

Cook the Bacon
In a large oven-safe skillet, heat the olive oil over medium heat. Add the chopped bacon and cook until crispy, about 5-7 minutes.

Mix the Egg Mixture
In a large bowl, whisk together the eggs, chopped sage, chopped mint, salt, and black pepper until well combined.

Bake the Frittata
Preheat your oven to 350°F (175°C). Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the center is set and the top is lightly golden.

Top with Ricotta
Remove the frittata from the oven. Let it cool for a few minutes before dolloping the ricotta cheese on top. Serve warm.
