In a cocktail shaker, combine 2 oz of Pisco, 1 oz of fresh lemon juice, 1 oz of fresh lime juice, 0.5 oz of simple syrup, and 1 egg white (if using).

Perform a 'dry shake' by shaking the mixture without ice for about 10-15 seconds to emulsify the egg white and create a frothy texture.

Add ice to the shaker and shake vigorously for another 15-20 seconds until well chilled.

Strain the mixture into a chilled coupe or rocks glass. Use a fine mesh strainer if you want to ensure a smooth texture.
