Roasted Garlic and Red Pepper Hummus

Prepare the Garlic
Preheat the oven to 400°F (200°C). Wrap garlic cloves in aluminum foil and drizzle with olive oil. Roast in the oven for 30-35 minutes until soft.

Blend the Hummus
In a food processor, combine chickpeas, roasted red bell pepper, roasted garlic (squeezed from skins), tahini, lemon juice, olive oil, salt, cumin, and water. Blend until smooth.

Adjust Seasoning
Taste the hummus and adjust salt or lemon juice if needed. Transfer to a serving bowl.
Whipped Feta and Honey

Blend the Feta
In a mixing bowl, combine feta cheese and cream cheese. Use a hand mixer to whip until smooth and creamy.

Garnish and Serve
Transfer the whipped feta to a serving dish and sprinkle with fresh herbs on top.
Tzatziki Dip

Prepare the Cucumber
Grate the cucumber and squeeze out excess water using a clean kitchen towel.

Let the tzatziki dip chill in the refrigerator for at least 30 minutes before serving.
Crispy Flatbread

Prepare the Dough
In a large bowl, mix flour and salt. Add olive oil and water, then knead until a smooth dough forms.

Divide the dough into small balls, roll each ball out into thin rounds, and sprinkle with sesame seeds.

Heat a skillet over medium-high heat. Cook each rolled flatbread for about 2-3 minutes on each side until golden and crispy.
