Base Seltzer

Prepare sweetened sparkling base
In a measuring pitcher, combine 2 tablespoons agave nectar, 1 tablespoon fresh lime juice and 1/2 teaspoon finely grated lime zest. Stir briskly until the agave is fully dissolved into the lime. Add 2 cups neutral sparkling water (chilled) and gently stir once or twice to combine. Do not over-stir to preserve carbonation.

In a cocktail shaker without ice, pour 2 oz silver tequila (or blanco mezcal if you prefer a smoky note) and 1/2 oz orange liqueur. Add 2 dashes of orange or grapefruit bitters if using. Add the prepared agave-seltzer mixture from the pitcher into the shaker, then fill the shaker with ice. Gently roll or shake once or twice — enough to chill the mixture but not so vigorously that you lose all carbonation. If you used sparkling water directly in the pitcher and want maximum fizz, pour the alcohol into the glass over ice and then top with the sweetened sparkling water instead of shaking.

If desired, rim a highball or collins glass with lime and dip in coarse salt (about 1/2 tsp). Add large ice cubes (about 1 cup) to the glass. Strain the alcohol/bitters mixture over the ice, then top gently with the agave-sparkling mixture if you didn't already combine. Give a gentle stir once to marry flavors. Taste and adjust: add an extra 1/2 tbs agave if you want it sweeter, or another splash (1/2 tbs) of lime for brightness.

Garnish with a lime wheel or wedge and optionally a sprig of fresh mint tucked into the glass. Serve immediately while fizzy.
