Spiced tomato juice mix | lime juice | Tajin rim | your choice of beer | 19oz glass

Pour the Tajín and coarse salt onto a small plate and mix briefly to combine. Run the lime wedge around the outer rim of a 19 oz glass to moisten it. Dip the rim into the Tajín-salt mixture and twist to coat evenly. Set the glass aside.

Prepare a lime wheel or wedge and set it aside for garnish.

In a mixing glass or shaker, combine the tomato juice (and Clamato if using), fresh lime juice, Worcestershire sauce, hot sauce, soy (or Maggi), celery salt, freshly ground black pepper, and smoked paprika (if using). Stir or roll gently to integrate — do not vigorously shake if using carbonated Clamato.

Make the mix

Taste the mix and adjust heat or salt: add additional hot sauce for heat, more lime for brightness, or a pinch more celery salt if needed. The mix should be savory, slightly spicy, and bright with lime.

Adjust seasoning

Fill the rimmed 19 oz glass about halfway with ice (about 1 cup). Pour the spiced tomato mix over the ice, leaving room for beer.

Chill with ice

Tilt the glass slightly and slowly pour the cold beer down the side to avoid excessive foaming. Pour until the glass is nearly full, leaving about 1/2 inch of head (approximately 12 oz beer in this recipe).

Give the drink one gentle stir with a long bar spoon or straw (1–2 turns) to marry the beer and tomato mix without flattening the beer's carbonation.

Combine gently

Garnish with the reserved lime wheel or wedge on the rim. Serve immediately with a straw and a napkin. Optionally offer extra hot sauce or Tajín at the table.
