Fish

Method

Fish

  1. 1

    Prep and season fish

Pat fish fillets dry with paper towels. Brush with 1–2 tbs olive oil and lime juice. In a small bowl mix smoked paprika, cumin, garlic powder, kosher salt, and black pepper; sprinkle evenly over both sides of the fillets.

  2. 2

    Grill option

Preheat a grill or grill pan to medium-high (about 425°F / 220°C). Oil the grill grates. Place fillets skin-side down (if skin-on) and grill 3–5 minutes per side depending on thickness, until fish flakes with a fork and reaches 145°F (63°C). Remove and let rest 2 minutes, then flake into large chunks for tacos.

  3. 3

    Fry option

For crispier fish, combine flour and cornstarch with a pinch of salt on a plate. Heat vegetable oil in a heavy skillet over medium-high until shimmering (about 350°F). Dredge each fillet lightly in the flour mixture, shaking off excess. Fry 2–3 minutes per side until golden and cooked through. Transfer to paper towels to drain and season immediately with a pinch of salt. Flake into taco-sized pieces.

Coastal Coleslaw

  1. 4

In a large bowl combine green cabbage, red cabbage, shredded carrot, red onion, and chopped cilantro.

  2. 5

In a small bowl whisk together lime juice, mayonnaise, Greek yogurt, honey, salt, and black pepper until smooth. Taste and adjust seasoning or acidity—add another 1/2 tbs lime juice if you want more brightness.

  3. 6

Pour dressing over the cabbage mixture and toss until evenly coated. Let sit at least 10 minutes for flavors to meld (can be made up to 2 hours ahead and chilled).

Avocado Crema

  1. 7

In a blender or food processor add the avocado, sour cream, lime juice, minced garlic, and salt. Blend until smooth, adding up to 1 tbs water to reach a creamy, drizzleable consistency.

  2. 8

Taste and adjust salt or lime. Transfer to a squeeze bottle or bowl and refrigerate until ready to assemble.

Crispy Capers & Garnishes

  1. 9

Heat 1 teaspoon olive oil in a small skillet over medium-high heat. Add drained capers and fry, stirring frequently, until they puff and become crispy, about 1–2 minutes. Remove with a slotted spoon to a paper towel-lined plate and sprinkle lightly with salt.

  2. 10

Warm tortillas: heat a dry skillet over medium-high heat and warm tortillas 20–30 seconds per side until soft and slightly charred in spots (or wrap in foil and heat in a 350°F oven for 8–10 minutes). Keep warm wrapped in a clean towel.

  3. 11

Prepare lime wedges and cilantro for garnish.

Assembly

  1. 12

Build each taco: place 1 warm tortilla on a plate, add a small handful (about 2–3 oz) of flaked fish, top with a generous spoonful of coastal coleslaw, drizzle 1–2 tbs avocado crema over the top, and finish with a sprinkle of crispy capers and a few cilantro leaves.

  2. 13

Serve immediately with lime wedges for squeezing. Offer extra crema and slaw on the side.
