Red Salsa (Roja)

    If you prefer a charred flavor, halve the tomatoes and broil or char them in a hot skillet for 4–6 minutes until slightly blackened; otherwise use raw tomatoes. Combine tomatoes, chopped white onion, cilantro, jalapeño, lime juice, salt, and pepper in a small food processor or blender.

    Pulse 6–10 times until you reach a slightly chunky salsa texture. Taste and adjust salt, lime, or jalapeño for heat. Transfer to a bowl, chill for at least 15 minutes to let flavors meld, then cover and refrigerate until serving.

Green Salsa (Salsa Verde)

    If you want a cooked flavor, simmer the tomatillos and serrano in 1/4 cup water for 6–8 minutes until softened; alternatively roast them under a broiler or in a hot skillet until blistered. Drain any excess water.

    Put cooked or raw tomatillos, cilantro, serrano, onion, lime juice, and salt in a blender or food processor. Pulse until a smooth-to-slightly-chunky consistency is reached, about 8–12 pulses. Taste and adjust salt or lime. Chill at least 15 minutes before serving to let flavors settle.

Chilled Rancho Queso

    In a medium bowl, beat softened cream cheese with a whisk or rubber spatula until smooth. Add sour cream, ranch dressing, garlic powder, onion powder, smoked paprika, salt, and pepper; whisk until combined.

    Gradually whisk in whole milk to reach a thick but scoopable dipping texture (should coat the back of a spoon). Fold in shredded cheddar and monterey jack and the chopped chives until evenly distributed.

    Cover the bowl and refrigerate at least 1 hour (up to 8 hours). Chilling improves texture and allows flavors to meld—serve cold or slightly chilled alongside salsas.

Assembly & Serving

    Arrange

    Place the red salsa, green salsa, and chilled ranch-style queso in three shallow bowls or a divided platter. Sprinkle extra cilantro or chives over the queso and one of the salsas if desired.

    Serve

    Surround dips with tortilla chips and lime wedges. Encourage guests to dip chips into each of the three dips for contrast: bright, tangy verde; fresh, slightly spicy roja; and cool, creamy ranch queso.

    Leftovers: Keep salsas and queso refrigerated in airtight containers for up to 3 days. Stir the queso before serving; it may firm slightly and can be loosened with a splash of milk.
