Combine 2 cups granulated sugar and 1/2 cup water in a small saucepan. Heat over medium, stirring constantly until the sugar fully dissolves and the mixture is clear. Do not boil aggressively; gently simmer for 2 minutes to ensure dissolution. Remove from heat.

Stir in 1 tablespoon dark cane sugar or molasses and 1 teaspoon caramel color (or a small amount of homemade burnt-sugar caramel) into the hot syrup until fully incorporated and color is even. Let cool to warm (about 10 minutes).
Flavoring (Cola Syrup Concentrate)

While the syrup cools, combine 1 cup fresh water and 1/4 teaspoon orange oil (or 1 teaspoon orange zest steeped briefly in 1 tablespoon neutral oil then strained) in a small heatproof bowl.

Add citrus: stir in 1 tablespoon fresh lime juice and 1 teaspoon fresh lemon juice into the water-orange mixture.

Add spices and aromatics: whisk in 1 teaspoon vanilla extract, 1/8 teaspoon ground cinnamon, 1/16 teaspoon freshly grated nutmeg, and 1/16 teaspoon ground coriander. If using, add 2 drops neroli/orange blossom water. Mix until evenly combined.

Add acids: dissolve 1/2 teaspoon citric acid into the flavoring mixture. If you choose to use food-grade phosphoric acid (to approach classic cola tang), add a single drop — it is potent; skip if unsure. Stir thoroughly.

Strain the flavoring mixture through a fine mesh sieve or cheesecloth into the cooled sugar syrup to remove any solids (zest, spice bits). Press gently to extract flavor, then discard solids.

Taste the combined syrup concentrate and adjust: it should be intensely flavored and sweet (concentrated). If it tastes too sharp, add up to 1 teaspoon more sugar dissolved in a splash of warm water. If too sweet, add a few more drops of citric acid or lemon/lime juice, adjusting carefully.

Allow the finished syrup concentrate to cool completely, then refrigerate in a sealed container if not using immediately. The syrup will keep refrigerated for up to 2 weeks.

Chill: Ensure cold carbonated water is very cold (near 35-40°F / 2-4°C). Cold liquids hold carbonation better.

Mix: For a standard serving, combine 1/4 cup (60 ml) cola syrup concentrate with 1 cup (240 ml) cold carbonated water in a tall glass. Gently stir once or twice to combine without losing much fizz. Adjust ratio to taste; classic soda often ranges from 1:4 to 1:5 syrup to water by volume.
