Buffalo Chicken Base

Prep chicken
If not already shredded, shred about 1.5–2 lb cooked chicken (rotisserie or poached). You should end up with approximately 3 cups shredded chicken. Pat dry any excess moisture with paper towels.

In a medium bowl, combine the softened cream cheese (8 oz), sour cream (1 cup), mayonnaise (1 tbsp) and ranch dressing (1 tbsp). Whisk until smooth and fully combined.

Stir in hot sauce (3 tbsp) to the cream cheese mixture until evenly incorporated. Taste and adjust heat by adding more hot sauce if desired.

Add shredded chicken (3 cups) to the buffalo-cream mixture. Fold gently until the chicken is evenly coated. Season with 1/2 tsp kosher salt and 1/4 tsp freshly ground black pepper. Mix thoroughly.

Stir 1 cup shredded sharp cheddar and 1 cup shredded Monterey Jack into the buffalo chicken mixture, reserving about 1/2 cup of cheese to sprinkle on top if you want an extra-melty finish.

Transfer the mixture to the skillet, spreading evenly. Sprinkle reserved 1/2 cup extra shredded cheddar over the top for a golden crust if using.

Bake uncovered in the preheated oven for 12–15 minutes, until the dip is bubbling around the edges and the top is melted. For a browned top, switch to broil on high for 1–2 minutes—watch carefully to prevent burning.

Remove the skillet from the oven and let rest for 3–5 minutes so the dip sets slightly.

Sprinkle 1 tablespoon crumbled blue cheese (optional) and 2 tablespoons sliced fresh chives over the hot dip before serving.

Leftovers: Cool to room temperature, cover and refrigerate up to 3–4 days. Reheat in a 350°F (175°C) oven for 10–15 minutes or microwave in 30-second intervals until warmed through.
