Method

Prep Shrimp & Filling

Prepare shrimp

Rinse and pat the shrimp dry with paper towels. If not already done, peel and devein, leaving tails intact. Using a small paring knife, make a shallow slit along the underside to slightly flatten the shrimp so they lay straighter for wrapping.

Make filling

In a medium bowl combine softened cream cheese, sliced green onions, chopped cilantro (if using), lime zest, minced garlic, soy sauce and sesame oil. Mix until smooth and evenly combined. Taste and adjust salt/pepper as needed.

Fill shrimp

Using a small spoon or spatula, smear about 1 tablespoon of the cream cheese mixture along the back of each shrimp (opposite the tail). Spread evenly but keep mixture thin enough to wrap.

Wrap & Bread

Prepare wrappers

Place one spring roll wrapper on a clean work surface with one corner pointing toward you (diamond shape). Lightly brush or dampen the edges with water to seal.

Wrap shrimp

Place a filled shrimp near the bottom corner of the wrapper, tail extending past the top of the wrapper. Fold the bottom corner over the shrimp, fold the two side corners toward the center, then roll up tightly so the wrapper overlaps and seals around the shrimp, leaving the tail exposed. Repeat with remaining shrimp and wrappers.

Set up breading stations

Place the flour in a shallow bowl or plate. Beat the eggs in a second shallow bowl. Place panko breadcrumbs in a third shallow bowl. Lightly season the flour and panko with a pinch of salt and pepper.

Coat shrimp

Working in batches, lightly dust each wrapped shrimp in flour, shaking off excess. Dip into the beaten egg, letting excess drip off, then press into panko breadcrumbs to coat evenly. Place coated shrimp on a tray and repeat until all are breaded.

Cook

Heat oil

Pour vegetable oil into a large skillet to a depth of about 1/4 to 1/2 inch (enough for shallow frying). Heat over medium-high until shimmering and a breadcrumb drops in sizzles immediately (about 350°F / 175°C). If you don't have a thermometer, test with one breadcrumb.

Fry shrimp

Carefully add 4–5 shrimp to the hot oil without overcrowding. Fry 1–1.5 minutes per side until golden brown and crisp, turning once with tongs so wrappers brown evenly. The shrimp inside will cook quickly; total frying time should be about 2–3 minutes depending on size. Adjust heat to maintain oil temperature.

Drain

Using a slotted spoon or tongs, transfer cooked shrimp to a paper towel-lined plate to drain excess oil. Repeat with remaining shrimp.

Optional oven finish (for very thick wrappers)

If any shrimp feel underdone or to reduce oil absorption, place fried shrimp on a baking sheet and finish in a 400°F (200°C) oven for 3–5 minutes.

Dipping Sauce

Combine sweet chili sauce, lime juice and 1/2 teaspoon soy sauce in a small bowl. Stir to combine. Serve warm or at room temperature alongside the crispy wrapped shrimp.

Serve

Arrange shrimp on a platter with tails intact for easy picking. Garnish with extra sliced green onions or lime wedges if desired. Serve immediately while hot and crispy.
