Make simple syrup
Combine 0.5 cups water and 0.5 cups granulated sugar in a small saucepan. Bring to a gentle simmer over medium heat, stirring until the sugar fully dissolves. Remove from heat and let cool to room temperature (about 10–15 minutes).

Flavor the syrup
Once the simple syrup has cooled, stir in 2 tablespoons of your chosen fruit or flavor concentrate (or omit if you prefer plain soda), 2 tablespoons fresh lemon juice, and 1/4 teaspoon vanilla extract. Taste and adjust: add up to 1 tablespoon more flavor concentrate or lemon juice if you prefer a brighter or stronger flavor.

Combine with carbonated water
Place 1 cup of ice into a tall pitcher or into individual serving glasses. Pour 4 cups chilled carbonated water over the ice. Gently stir in the flavored simple syrup mixture. Stir carefully just to incorporate — avoid vigorous stirring to preserve carbonation.

Adjust sweetness and flavor
Taste the soda and adjust sweetness or acidity if needed by adding small amounts (1 teaspoon) of the simple syrup for sweetness or a few drops of lemon juice for brightness. Mix gently after each addition.
