Prepare rice
Rinse 1/2 cup long-grain rice under cold water until water runs clear. Drain and set aside to remove excess water for 10 minutes.

In a large bowl combine the ground beef (1 lb) with the rinsed rice, the cooled sautéed onions, 1/4 cup chopped parsley, 2 tablespoons chopped fresh mint, 1.5 tablespoons tomato paste, 1.5 teaspoons salt, 1/2 teaspoon black pepper, 1/4 teaspoon ground allspice and 1/8 teaspoon ground cinnamon (if using). Mix thoroughly with your hands or a spoon until evenly combined. The mixture should be moist but not watery. Adjust seasoning to taste.

Prepare grape leaves
If using jarred grape leaves (about 3/4 cup loosely packed leaves), drain them and rinse under cool water to remove brine. Pat dry with a towel. If using fresh leaves, blanch them in boiling water for 30–60 seconds until pliable, then cool in an ice bath.

Trim and flatten
Lay one grape leaf shiny side down on a flat surface. Trim any tough stems. Place about 1 to 1 1/2 tablespoons of the meat-rice filling near the base of the leaf, about 1 inch from the stem end.

Fold assembly: Fold the bottom stem end up over the filling, then fold both sides toward the center and roll tightly away from you to form a neat cylinder. Do not overfill; the rice will expand. Repeat until all filling is used. You should get approximately 24–28 rolls depending on size of leaves and how full you make them.

Layer pot
Line the bottom of a wide, heavy-bottomed pot with a few reserved whole grape leaves (or lemon slices) to prevent sticking. Arrange stuffed grape leaves seam-side down in tight concentric circles or rows. Pack them snugly to prevent unraveling during cooking.

When the bottom layer is complete, add more lemon slices if using. Continue layering until all rolls are in the pot. Drizzle 1 tablespoon olive oil over the top, pour 1/2 cup tomato sauce (or diluted tomato paste) and 2 cups broth (or water) gently over the rolls — just enough liquid to almost cover them (liquid level should be about 1/2 inch below the top of the rolls). Place a small heatproof plate upside down on top of the rolls to keep them pressed down.

Cook
Bring the pot to a gentle simmer over medium-high heat, then reduce to low, cover, and simmer gently for 50–60 minutes, until rice and meat are cooked through. Avoid a hard boil to prevent the leaves from tearing. Check once at 30 minutes: if liquid has evaporated too much, add a few tablespoons of water or broth.

Finish and rest: Turn off the heat and let the stuffed grape leaves rest, covered, for 15–20 minutes to firm up. Remove the plate and carefully transfer rolls to a serving platter using a spatula or tongs, keeping them upright if possible.

Storage: Refrigerate leftovers in an airtight container for up to 3 days. Reheat gently in a covered skillet with a splash of water or in the microwave until warmed through. You can also freeze for up to 2 months; thaw overnight in the fridge before reheating.
