Add the garlic cloves and olive oil to the whipped tahini-lemon mixture and pulse 3–4 times to incorporate.

Add the drained chickpeas, ground cumin, and salt. Process 1 minute, then stop and scrape down the bowl.

With the processor running, add cold water or reserved chickpea liquid (start with 3 tablespoons) through the feed tube in a steady stream to loosen the mixture. Continue processing 1–2 minutes until very smooth. If the hummus is still too thick or grainy, add additional liquid 1 tablespoon at a time until you reach a spreadable, creamy texture.

Taste and adjust seasoning: add more salt, lemon juice, or cumin as desired and pulse briefly to combine.

Spoon hummus into a shallow serving bowl and use the back of a spoon to create a swirl or well in the center.

Drizzle 1 tablespoon extra-virgin olive oil over the top, sprinkle paprika, chopped parsley, and toasted pine nuts (if using).

If serving later, cover and refrigerate up to 3 days. For best flavor, bring to room temperature 20–30 minutes before serving and stir gently, adding a drizzle of olive oil if the surface has dried.
