Espresso (base)

Method

Espresso (base)

  1. 1

    Grind and dose

Weigh 18 g of fresh coffee beans. Grind to a fine texture suitable for espresso (similar to table salt).

  2. 2

    Tamp

Place the ground coffee into the portafilter basket. Distribute evenly and tamp with consistent pressure to create a smooth, level puck.

  3. 3

    Brew

Lock the portafilter into the espresso machine and start extraction. Brew approximately 36 ml of espresso (a double ristretto/short double) in about 25–30 seconds. If using a stovetop espresso maker, brew according to the manufacturer's instructions to yield about 36 ml.

  4. 4

    Adjust

If the shot extracts too quickly (<20 s) make the grind finer or increase dose slightly. If it extracts too slowly (>35 s) make the grind coarser or reduce dose slightly.

Optional preparations and serving

  1. 5

    Straight espresso

Serve the 36 ml espresso immediately in a preheated demitasse or small cup. Optionally garnish with a pinch of cinnamon or cocoa.

  2. 6

    Americano

Pour 120 ml hot water into a mug, then add the 36 ml espresso on top to preserve crema. Stir gently. Adjust strength by changing hot water volume.

  3. 7

    Latte (steamed milk)

Steam 120 ml milk to about 60–65°C (140–150°F) until it has microfoam consistency. Pour steamed milk over the 36 ml espresso with a 1:3 ratio (espresso:milk) to make a small latte. Optionally texture foam and pour latte art.

  4. 8

    Iced coffee (espresso over ice)

Fill a glass with ice (or 4 tbsp cold milk + ice for creamier). Pour the 36 ml espresso over the ice. Add sugar or simple syrup 1 tsp if desired and stir to combine. Top with cold milk if you prefer a latte-style iced coffee.

  5. 9

    Sweetening and garnish

If desired, add 1 tsp sugar or simple syrup to the hot espresso or to the milk before pouring so it dissolves. Finish with a light pinch of cinnamon or cocoa on top.

  6. 10

    Serve

Serve immediately while hot (or immediately over ice for iced version). Clean equipment after use.
