In a large mash tun, heat 3 gallons of water to 165°F (74°C). Add the Pilsner and Carapils malts. Maintain a mash temperature of 152°F (67°C) for 60 minutes.

Mash Preparation

After mashing, sparge with 2 gallons of water at 170°F (77°C) to rinse the grains. Collect the wort in the brew kettle.

Sparging

Bring the wort to a boil. Add Hallertau hops at the start of the boil and Saaz hops with 15 minutes left. Boil for a total of 60 minutes.

Boil

Cool the wort quickly using a wort chiller until it reaches 70°F (21°C). Transfer to a sanitized fermentation vessel and pitch the Wyeast 2124 yeast.

Cooling and Fermentation

Allow the beer to ferment at 60-65°F (15-18°C) for about 2 weeks, or until fermentation is complete.

Fermentation

Once fermentation is complete, bottle the beer with priming sugar to carbonate. Allow the bottles to condition for an additional 2 weeks.
