Brewing Process

1. Mash the Grains

In a large mash tun, heat 5 liters of water to 65°C (149°F). Add the pilsner malt, wheat malt, and acidulated malt. Hold the temperature for 60 minutes, stirring occasionally.

2. Sparge the Grains

After mashing, sparge the grains with hot water to collect the wort in your brew kettle.

3. Boil the Wort

Bring the wort to a boil and add Citra and Mosaic hops. Boil for 60 minutes, adding hops according to your flavor and aroma preferences.

4. Cool the Wort

After boiling, cool the wort quickly using a wort chiller or an ice bath until it reaches about 20°C (68°F).

5. Fermentation

Transfer the cooled wort into a sanitized fermentation vessel. Pitch the Lactobacillus culture and American Ale yeast. Seal with an airlock and ferment at 20-22°C (68-72°F) for 1-2 weeks.

6. Add Corn Sugar and Carbonate

Once fermentation is complete, dissolve corn sugar in a small amount of water and add it to the beer for carbonation. Bottle the beer and let it carbonate for another 1-2 weeks.

7. Optional Fruit Addition

If desired, add fruit puree to the beer during the secondary fermentation for additional flavor.

8. Enjoy
