In a large mash tun, combine the Pale Malt and Caramel Malt with 5 liters of filtered water. Heat the mixture to 152°F (67°C) and hold for 60 minutes.

After mashing, sparge the grains with additional water to collect around 6 liters of wort.

Sparge

Bring the wort to a boil. Once boiling, add Citra Hops and boil for 60 minutes. Add Mosaic and Amarillo Hops in the last 15 minutes of the boil.

Boil

Cool the wort quickly to fermentation temperature using a wort chiller.

Cool

Transfer the cooled wort to a sanitized fermenter and pitch the American Ale Yeast. Seal and ferment at 68°F (20°C) for about 2 weeks.

Ferment

Add the dry hops (Citra and Mosaic) during the last week of fermentation for added aroma.

Dry Hopping

Once fermentation is complete, bottle the beer with priming sugar and let it carbonate for 2 weeks.
