Brewing Process

1. Mashing

In a large brew kettle, heat 5 gallons of water to 165°F. Add the Pale Malt, Crystal Malt, and Roasted Barley, stirring to combine. Maintain the temperature at 150°F for 60 minutes to allow the sugars to extract.

2. Sparging

After mashing, sparge the grains with hot water (around 170°F) until you collect about 6 gallons of wort.

3. Boiling

Bring the wort to a boil and add the bittering hops. Boil for 60 minutes, adding the flavor hops in the last 10 minutes of the boil.

4. Cooling

Cool the wort quickly using a wort chiller until it reaches around 70°F.

5. Fermentation

Transfer the cooled wort to a sanitized fermentation vessel. Add the yeast and lactose, then seal the vessel with an airlock. Allow it to ferment for 1-2 weeks at around 65-70°F.

6. Packaging

Once fermentation is complete, transfer the beer into a keg or bottles. If kegging, use a nitrogen tank to carbonate. For bottles, add priming sugar before sealing.

7. Aging

Let the beer age for at least another week in the keg or bottles before serving.
