Directions

1

Roasting the Bones

Preheat your oven to 450°F (230°C). Place the bone marrow bones upright in a roasting pan and roast in the oven for about 15-20 minutes, or until the marrow is soft and begins to pull away from the bone.

2

Making the Whipped Mixture

While the bones are roasting, melt the butter in a small saucepan over low heat. Add minced garlic and fresh thyme, cooking until fragrant, about 2 minutes. Remove from heat and let cool slightly.

3

Combining Ingredients

Once the bones are done roasting, let them cool slightly. Using a small spoon, scoop the marrow out of the bones into a mixing bowl. Add the melted butter mixture, salt, black pepper, and lemon zest to the bowl.

4

Whipping

Using a hand mixer or whisk, whip the mixture until it becomes smooth and creamy. Adjust seasoning as needed.

5

Serving

Serve the whipped bone marrow spread on slices of baguette or toast. Enjoy!
