Prepare the Steak

Season the ribeye steaks generously with salt and black pepper on both sides.

Sear the Steak

In a large skillet, heat olive oil over medium-high heat. Add the ribeye steaks and sear for about 4-5 minutes per side for medium-rare, or until desired doneness. Remove from skillet and let rest.

Make the Au Jus

In the same skillet, add minced garlic and cook until fragrant, about 30 seconds. Then add red wine and scrape up any browned bits from the bottom of the pan. Allow to simmer for about 5 minutes.

Add Broth and Herbs

Stir in the beef broth and add fresh thyme. Simmer for an additional 10-15 minutes until the sauce reduces slightly.

Remove the thyme sprigs and stir in butter until melted. Adjust seasoning with salt and pepper to taste.
