Preparing the Rice

Cook the Rice

Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker or pot. Cook according to the rice cooker's instructions or bring to a boil, then cover and simmer for 18-20 minutes until the water is absorbed.

Season the Rice

In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Allow the rice to cool to room temperature.

Cooking the Mushroom Mixture

Sauté the Mushrooms and Burdock

In a skillet, heat sesame oil over medium heat. Add minced garlic and grated ginger, and sauté for about 1 minute until fragrant. Add shiitake mushrooms and burdock, cooking for 5-7 minutes until tender.

Add Flavor

Stir in soy sauce and yuzu juice, cooking for an additional 2 minutes. Remove from heat and set aside.

Assembling and Serving

Crispy Rice Assembly

In a separate pan, spread a thin layer of the seasoned rice and press down to form a compact layer. Cook on medium heat until crispy and golden brown on the bottom, about 5-7 minutes. Flip and cook the other side until crispy.

Serve

Top the crispy rice with the sautéed mushroom mixture. Garnish with sliced green onions, toasted sesame seeds, and yuzu zest. Serve immediately.
