In a large bowl, toss the corn ribs with olive oil, smoked paprika, salt, and black pepper until evenly coated.

Heat a deep saucepan with oil over medium-high heat. Fry the corn ribs in batches for about 3-4 minutes or until golden and crispy. Drain on paper towels.

Make Squid Ink Aioli

Combine Ingredients

In a small bowl, whisk together the mayonnaise, squid ink, minced garlic, lemon juice, and salt until smooth.

Assemble the Dish

On a serving plate, arrange the fried corn ribs.

Drizzle the squid ink aioli over the corn ribs. Top with dollops of ricotta cheese, slices of roasted pasilla peppers, and sprinkle with chopped chives.
