Make the sauce

In a small bowl combine 2 tbs mayonnaise, 1 tsp Dijon mustard, 1/2 tsp honey, 1/2 tsp lemon juice, 1/4 tsp minced garlic, 1/4 tsp smoked paprika, 1/8 tsp salt and 1/8 tsp black pepper. Whisk until smooth and taste; adjust salt, pepper or honey for sweetness. Set aside while you assemble the sandwich so flavors meld (about 5 minutes).

Prepare avocado and tomato

Halve and pit the avocado. Scoop out half (about 1/2 avocado) into a small bowl and mash gently with a fork until slightly chunky. Squeeze up to 1/2 lemon wedge into the avocado to prevent browning and season with a pinch of salt and a grind of black pepper. Slice tomato into 2 medium even slices and pat dry with a paper towel to remove excess moisture.

Assemble sandwich

Spread about 1 tablespoon of Signature Sauce evenly on the inside of each slice of Parmesan sourdough. On one slice, layer the roasted turkey slices (4 oz) evenly, then place Swiss cheese slice on top of the turkey, followed by cheddar slice. Add the two tomato slices on top of the cheeses, then spread the mashed avocado over the tomato. Crumble or layer the 2 cooked bacon strips over the avocado. If using microgreens/arugula, add them now. Top with the other bread slice, sauce side down.

Grill the sandwich

Heat a nonstick skillet or griddle over medium-low to medium heat. Spread 1/2 tablespoon of butter on the outside face of each piece of bread (the top and bottom). Place the sandwich in the skillet and press gently with a spatula. Cook for 3-4 minutes until the bottom is golden brown and the cheese starts to melt. Carefully flip the sandwich and cook another 3-4 minutes, pressing occasionally, until the second side is golden and cheese is fully melted. If the bread is browning too quickly before cheese melts, reduce heat to low and cover the skillet for 1-2 minutes to help the cheese melt through.

Rest and slice

Transfer the sandwich to a cutting board and let it rest for 1 minute to let the cheese set slightly. Slice the sandwich in half on the diagonal and serve immediately with the remaining Signature Sauce on the side if desired and an extra grind of black pepper.
