Prepare Bacon
Cook 3 slices of bacon until crisp. For stove-top: place bacon in a cold skillet, turn heat to medium, and cook 3–5 minutes per side until browned and crisp. Drain on paper towels and keep warm. For oven: place on a rimmed baking sheet lined with foil and bake at 400°F (200°C) for 12–18 minutes until crisp, then drain.
Prepare Avocado
Halve and pit 1/2 avocado. Scoop flesh into a small bowl and mash slightly with a fork so it’s spreadable but still a little chunky. Stir in 1/2 tsp lemon juice and a pinch (~1/8 tsp) of salt to prevent browning and to season.
Assemble Sandwich
Spread 1 tablespoon mayonnaise on the inside of each toasted sourdough slice. On one slice, layer the mashed avocado over the mayo. Add 4 oz thinly sliced roasted turkey evenly over the avocado. Place 3 slices of cooked bacon on top of the turkey. Add 2 leaves of lettuce over the bacon, then top with 3 slices of tomato. Season tomato with the remaining pinch of salt (~1/8 tsp) and freshly ground black pepper (about 1/8–1/4 tsp) to taste. If using Dijon mustard, spread the 1/2 tsp on the other bread slice’s mayo before finishing.
Close the sandwich with the second slice of toasted sourdough (mayo/mustard side down). Press gently, cut diagonally if desired, and serve immediately.
Spread & Seasoning
Combine 2 tablespoons mayonnaise with 1/2 teaspoon Dijon mustard (if using) in a small bowl and whisk until smooth. Use this mixture to spread on the toasted bread. Reserve 1/2 teaspoon lemon juice to mix into the mashed avocado as directed above.
