Chipotle Mayo
Make sauce
In a small bowl, combine 1 cup mayonnaise, 1 tablespoon minced chipotle peppers in adobo, 1 teaspoon fresh lime juice, 1 teaspoon honey, 1 teaspoon smoked paprika, 1 teaspoon salt, and 1 teaspoon black pepper. Whisk until smooth and taste; adjust heat (add more chipotle) or acidity (add more lime) as desired. Refrigerate while assembling sandwiches to let flavors meld, at least 10 minutes.
Sandwich prep & cook
Cook bacon
Cook 8 slices of bacon until crisp using your preferred method: in a skillet over medium heat (turning occasionally) for about 8–12 minutes, or in the oven on a baking sheet at 400°F (200°C) for 15–18 minutes. Drain on paper towels. Keep warm or reheat briefly before assembling.
Prep produce and cheese
While bacon cooks, thinly slice 1 small red onion and 1 medium tomato into 1/4" rounds. Wash and dry 8 lettuce leaves. Separate 4 slices of cheddar cheese. Arrange sliced roasted turkey so you can layer roughly 3 oz (about 3 slices or a small pile) per sandwich.
Prepare croissants
Slice each croissant horizontally. Lightly butter cut faces with the softened unsalted butter. Heat a large skillet or griddle over medium heat with 1 teaspoon olive oil. Place croissant halves cut-side down in the skillet and toast 1–2 minutes until golden and lightly crisped. Remove from heat.
Assemble sandwiches
Spread about 1.5 tablespoons of the chipotle mayo onto both the top and bottom halves of each toasted croissant. On the bottom half, layer 3 oz roasted turkey, 1 slice of cheddar, 2 slices of tomato (or enough to cover), 2 slices of cooked bacon, 2 lettuce leaves, and a few thin rings of red onion. Top with the croissant top half spread with mayo. Repeat for remaining sandwiches.
Optional final toasting
If you prefer the cheese melted and the sandwich warmed through, place assembled sandwiches back in the skillet over low heat, cover loosely with a lid for 1–2 minutes until cheese softens, or put on a sheet pan under a broiler for 30–60 seconds—watch closely to avoid burning.
Serve
Cut each sandwich in half on a slight diagonal if desired. Serve immediately with extra chipotle mayo on the side.
