Method
Make the Bite Mixture
Toast oats (optional)
Preheat a dry skillet over medium heat. Add 2 cups rolled oats and toast, stirring, for 4–5 minutes until fragrant and slightly golden. Remove and cool 5 minutes. (This step enhances flavor but can be skipped.)
In a large mixing bowl combine the toasted (or raw) oats, 1 cup protein powder, 1/4 cup ground flaxseed, 2 tablespoons cocoa powder and 1/4 teaspoon kosher salt. Whisk to evenly distribute dry ingredients.
Add wet ingredients: 1 cup peanut butter, 1/2 cup maple syrup and 2 teaspoons vanilla extract. Using a sturdy spatula or wooden spoon, mix until a thick, slightly sticky dough forms. If the mixture feels too dry, add 1–2 tablespoons water or almond milk to reach a moldable consistency; if too wet, add 1–4 tablespoons oats or protein powder.
Fold in mix-ins: gently stir in 1/2 cup mini chocolate chips, 1/2 cup chopped nuts, 1/2 cup shredded coconut (if using) and 2 tablespoons chia or hemp seeds. Ensure even distribution but avoid overmixing which warms the butter and makes the dough sticky.
Forming & Portioning into Cups
Line a baking tray with parchment. Using a small cookie scoop (about 1 tablespoon) or a teaspoon, portion the mixture into 24 even bite-sized balls. Roll each in your palms to compress and shape into a firm bite. Aim for 24 bites so each of the 12 cups receives 2 bites.
Place two bites into each of the 12 small serving cups. Press them gently so they sit snugly and won’t roll. If you prefer slightly firmer bites, refrigerate the tray of assembled cups for 20–30 minutes to set before coating/drizzling.
Chocolate Drizzle & Finishing (optional)
Prepare chocolate: chop 4 oz dark chocolate. In a microwave-safe bowl heat the chocolate with 1 teaspoon coconut oil in 20–30 second bursts, stirring between bursts until fully melted and smooth. Alternatively use a double boiler.
Drizzle or dip: spoon chocolate over the bites in each cup (or dip half of each bite) to coat partially. Sprinkle a tiny pinch of sea salt flakes on top of any drizzled chocolate for contrast. Allow chocolate to set at room temperature (15–20 minutes) or refrigerate 8–10 minutes until firm.
Storage & Serving
Cover each cup with plastic wrap or lids. Store in the refrigerator for up to 10 days or freeze for up to 3 months. If frozen, thaw in the refrigerator for 30–60 minutes before serving.
To serve: bring refrigerated cups to cool room temperature for 5–10 minutes for softer texture, or serve chilled. Each cup contains 2 bites; yield is 12 cups (24 bites total).
