Toast oats (optional)

Preheat a dry skillet over medium heat. Add 2 cups rolled oats and toast, stirring constantly, 3–4 minutes until fragrant and slightly golden. Alternatively, leave oats untoasted. Let cool 2 minutes.

In a large mixing bowl, combine 1.5 cups protein powder, 0.25 cup ground flaxseed, 0.25 tsp sea salt, and 0.5 tsp cinnamon (if using). Whisk briefly to evenly distribute dry ingredients.

Add the toasted/cooled oats to the dry mixture and stir to combine.

In a separate microwave-safe bowl or small saucepan, gently warm 1 cup peanut butter and 0.5 cup honey (or maple syrup) together for about 20–30 seconds in the microwave or over low heat just until soft and pourable. Stir in 0.25 cup unsweetened applesauce and 1 tsp vanilla extract until smooth.

Pour the wet mixture into the dry ingredients. Stir with a sturdy spatula or wooden spoon until a thick, evenly combined dough forms. If the mixture seems too dry to hold together, add 1–2 tbsp additional honey or applesauce; if too wet, add 1–2 tbsp oats or protein powder.

Fold in 0.75 cup mini chocolate chips and 0.5 cup shredded coconut (if using). Reserve a tablespoon of chips for topping if desired.

Line a 9x13-inch tray or rimmed baking sheet with parchment paper, or lightly grease it. Using a small cookie scoop (about 1.25 tablespoons) or a scale, portion the mixture into 24 equal pieces. Roll each portion quickly between your palms to form tight balls. Place balls on the prepared tray, spaced slightly apart. If mixture sticks to hands, lightly wet your hands or dust them with a little oat flour.

Press each ball slightly to form a compact bite if you prefer a flatter shape. Sprinkle reserved chips or extra chopped nuts on top and gently press to adhere.

Chill & Finish

Place the tray with shaped bites in the refrigerator for at least 30 minutes to firm up and set. For firmer bites, chill 60–90 minutes.

If using chocolate drizzle: melt 0.25 cup dark chocolate in 15–30 second intervals in the microwave, stirring between intervals, until smooth. Drizzle melted chocolate over chilled bites using a spoon or piping bag. Return to refrigerator 10 minutes to set the drizzle.

Once set, transfer the 24 protein bites to an airtight container. Store in the refrigerator for up to 10–14 days or freeze for up to 3 months. Thaw in refrigerator before serving if frozen.
