Half Waffle

Preheat and mix dry

Preheat your waffle iron to medium-high. In a medium bowl whisk together 0.5 cup all-purpose flour, 0.5 tsp sugar, 0.5 tsp baking powder, and 0.125 tsp salt until evenly combined.

Combine wet ingredients

In a small bowl whisk 0.5 cup milk, 0.5 of a large egg (beat one egg and use half), 1 tbs melted butter and 0.25 tsp vanilla until smooth.

Make batter and cook

Pour the wet mixture into the dry ingredients and stir gently until just combined — a few small lumps are fine. Brush or spray the waffle iron with cooking spray or melted butter. Pour about half of a standard waffle portion (approx. 3/4 to 1/2 of a full waffle batter portion depending on your iron) onto the iron to make a half waffle. Close and cook for 3–5 minutes until golden and crisp. Transfer to a plate and keep warm.

Prep

While the waffle cooks, heat a nonstick skillet over medium-low heat and add 1 tsp butter or oil. Crack two large eggs into a small bowl or ramekin.

Cook eggs (fried/sunny-side or over-easy)

For sunny-side-up: gently slide eggs into the skillet, cover, and cook 2–3 minutes until whites are set but yolks still runny. For over-easy: cook 2 minutes, flip carefully, and cook 15–30 seconds more. Season with 0.25 tsp salt and 0.125 tsp black pepper. Remove to plate and keep warm.

Bacon or Turkey Sausage

Cook bacon

If using bacon: place two slices in a cold skillet, then turn heat to medium. Cook 3–5 minutes per side until crisp or to desired doneness, turning once. Drain on paper towels.

Cook turkey sausage

If using turkey sausage links: heat 1 tsp olive oil in the skillet over medium heat. Add two links and cook 8–10 minutes, turning frequently, until browned and cooked through (internal temp 165°F / 74°C). Drain on paper towels.

Choice of Side (hash browns, fruit, or potatoes)

Hash browns (if chosen)

If using frozen hash browns: heat a small nonstick skillet over medium-high with 1 tsp oil or butter, add 0.5 cup hash browns, press into an even layer, and cook 3–4 minutes per side until golden and crisp. Season with a pinch of salt.

Fresh fruit (if chosen)

If using fresh fruit: rinse and drain 0.5 cup mixed berries or sliced fruit. Toss gently and transfer to serving bowl. No cooking required.

House potatoes (if chosen)

If using diced roasted potatoes: toss 0.5 cup diced potatoes with 1 tsp oil, salt and pepper, and roast in a 425°F (220°C) oven for 12–18 minutes until golden and tender, or pan-fry in a skillet over medium-high heat for 8–10 minutes until browned.

To Serve

Assemble the combo by placing the hot half waffle on the plate with 1 tbs butter and 2 tbs maple syrup on the side or drizzled over the waffle. Add the two cooked eggs and the two pieces of bacon or two turkey sausage links. Add the chosen side (hash browns, fruit, or potatoes). Serve immediately while hot.
