Method
Crepes (makes 2 crepes)
Make batter
In a medium bowl, whisk together 3 tablespoons flour, 1 teaspoon sugar (optional), and a pinch of salt. In a separate small bowl, beat 1 large egg, then whisk in 3 tablespoons milk and 3 tablespoons water until combined. Gradually pour the wet mixture into the flour while whisking to avoid lumps. Whisk in 1 teaspoon melted butter until smooth. The batter should be thin and pourable; if too thick, stir in up to 1 tablespoon additional milk or water.
Cook crepes
Heat a nonstick skillet or crepe pan over medium heat and brush with a little butter or oil (about 1 tsp). Pour about 3 tablespoons of batter into the center of the pan, immediately tilt and swirl the pan to spread the batter into a thin, even circle (about 7–8 inches). Cook until edges lift and underside is lightly golden, about 30–45 seconds. Flip with a spatula and cook the other side 15–20 seconds until set and faintly golden. Transfer to a plate and keep warm. Repeat with remaining batter to make a second crepe. Wipe pan and re-grease as needed.
Keep warm
Stack cooked crepes on a plate and cover loosely with foil to keep warm while you finish other components.
Eggs
Cook eggs (sunny-side or over-easy)
Heat a small nonstick skillet over medium-low and add 1 tsp butter or oil. Crack 2 large eggs into the pan. Sprinkle with 1/4 tsp salt and a pinch (about 1/8 tsp) black pepper. For sunny-side up: cook gently until whites are set and yolks still runny, about 3–4 minutes; cover the pan for the last minute to help whites set. For over-easy: cook until whites set (about 2–3 minutes), flip carefully and cook 15–30 seconds more for a runny yolk. Remove eggs and keep warm.

Cook bacon
Option A - Skillet: In a medium skillet over medium heat, add bacon strips (no extra oil needed). Cook turning occasionally until browned and crisp to your liking, about 6–8 minutes. Transfer to paper towels to drain. Option B - Oven: Bake at 400°F (200°C) for 12–15 minutes on a foil-lined sheet until crisp. Keep warm.
Choice of Side (pick one)
Mixed fruit
If choosing fruit: combine 1/2 cup mixed berries and diced melon or pineapple in a small bowl and chill briefly. No cooking required.
Side salad
If choosing side salad: toss 1/2 cup mixed greens with a light drizzle of oil and vinegar or a squeeze of lemon. Season lightly with salt and pepper.
Toast or Biscuit (choose one)
Assemble & Serve
Place two warm crepes on the plate. Fold or roll crepes as desired (fold in half or roll with a small smear of butter or a drizzle of maple syrup if desired). Arrange two eggs alongside the crepes. Add two pieces of bacon and the turkey sausage patty. Add your chosen side (potatoes, fruit, or salad) and the slice of toast or biscuit. Finish crepes with powdered sugar and maple syrup or a lemon wedge if using. Serve immediately.
