Prepare wet mixture

In a large mixing bowl, combine the peanut butter and honey (or maple syrup). Microwave or gently warm if needed for 15–20 seconds to soften so it mixes smoothly. Stir in the vanilla extract until homogenous.

Combine dry ingredients

In a separate bowl, whisk together the rolled oats, protein powder, ground flaxseed, cocoa powder, chia seeds (if using), and sea salt until evenly distributed.

Mix to form dough

Add the dry mixture to the wet mixture and stir with a spatula until mostly combined. If the mixture feels too dry, add 1–2 tablespoons of warm water or additional honey; if too wet, add 2–4 tablespoons of oats or 1–2 tablespoons of protein powder. Fold in the mini chocolate chips.

Portion and finish

Line a baking sheet with parchment paper. Using a small cookie scoop or tablespoon, portion the mixture into 12 equal portions (about 2 tablespoons each). Roll each portion between your palms to form tight, uniform balls.

Optional coating

If desired, spread the shredded coconut on a small plate and roll each ball in the coconut to coat lightly. Press gently so coconut adheres.

Chill and store

Place the bites on the parchment-lined sheet and refrigerate for at least 30 minutes to set. Transfer to an airtight container and store in the refrigerator for up to 7 days or freeze for up to 3 months. Bring to room temperature briefly before eating if chilled.

Fruit Kabobs (12 kabobs)

Prep fruit

Wash all fruit thoroughly. Hull strawberries and pat dry. Peel and slice kiwis into rounds. Cut pineapple and melon into 1-inch pieces. Keep blueberries and grapes whole. Pat all pieces dry to prevent slipping on skewers.

Assemble kabobs

Arrange a clean workstation with fruit and skewers. Thread fruit onto each skewer in an appealing pattern (for example: strawberry, pineapple, grape, melon, blueberry, kiwi, grape). Aim for 6–7 pieces per 6-inch skewer. Repeat to make 12 kabobs.

Prepare honey-lime drizzle (optional)

In a small bowl, whisk together the honey-lime drizzle (about 1/4 cup honey) with 1 tablespoon fresh lime juice until smooth. Taste and adjust sweetness or acidity as desired.

Finish and garnish

Arrange kabobs on a tray. Lightly brush or drizzle the honey-lime mixture over the kabobs if using, and garnish each with a small mint leaf. Keep chilled until serving.

Storage

If not serving immediately, cover the tray with plastic wrap and refrigerate up to 12 hours. For best appearance, add mint garnish right before serving.
