Method
Fruit Bowl
Prep the fruit
Wash all fruit thoroughly. Hull and quarter strawberries if using. Halve grapes if large. Peel and slice kiwi and melon into bite-sized pieces. Cut larger fruit into uniform, bite-size pieces so the bowl is easy to eat.
Assemble dressing
In a small bowl or jar, whisk together the lemon juice, honey, and orange zest (if using) until the honey is dissolved and the mixture is slightly emulsified.
Combine
Place the prepared fruit in a medium mixing bowl. Pour the honey-lemon dressing over the fruit and gently toss with a large spoon or spatula until all pieces are lightly coated. Add the chopped fresh mint and fold once or twice to distribute.
Chill briefly
Cover and refrigerate the fruit bowl for 10–20 minutes to let flavors marry. Do not chill longer than 2 hours to avoid dilution of flavor and sogginess.
Transfer the fruit to a serving bowl just before serving, spooning any accumulated juices over the fruit for extra flavor.
Mini Pastry Tray
Warm and glaze pastries
Preheat oven to 325°F (160°C). Arrange the mini pastries on a baking sheet lined with parchment. Lightly brush the tops with melted butter. Warm in the oven for 5–8 minutes until just heated through and slightly crisp on the edges—avoid overbaking. If using danishes and apricot jam, warm the jam briefly (10–15 seconds in microwave) and brush a thin layer over the fruit center of each danish after warming.
Finish
Remove pastries from oven and let rest 1–2 minutes. Dust croissants and pain au chocolat lightly with powdered sugar if desired. Place pastries on a small tray or platter with space between each for presentation.
Plating & Serving
Arrange the chilled fruit bowl and the warmed pastry tray together. Place small ramekins of Greek yogurt or mascarpone nearby and sprinkle toasted nuts in a small bowl for guests to add if desired.
Serve immediately so pastries remain warm and fruit stays bright. Leftover fruit can be refrigerated (covered) up to 48 hours; pastries are best consumed same day.
