Prepare custard

In a large mixing bowl, whisk together the eggs, whole milk, heavy cream, granulated sugar, vanilla extract, ground cinnamon, and salt until smooth and homogenized. Taste a drop and adjust sugar or cinnamon if desired.

Soak bread

Arrange the 12 slices of brioche or challah on a rimmed baking sheet in a single layer. Pour or ladle the custard evenly over the bread, turning each slice to coat both sides. Let the slices rest for 1–3 minutes per side (longer for very thick slices or day-old bread) so the custard is absorbed but bread doesn’t fall apart.

Heat pan or griddle

Preheat a large nonstick skillet or electric griddle to medium heat (about 325–350°F / 160–175°C). Add 1 tablespoon of butter and 1 teaspoon of oil per 3–4 slices to the surface to prevent burning; keep additional butter handy.

Cook the French toast

Working in batches, transfer soaked slices to the hot surface. Cook 3–4 minutes per side, until deep golden brown and slightly crisp at the edges, pressing gently once with a spatula to ensure even contact. Add more butter/oil between batches. Transfer cooked slices to a baking sheet and keep warm in a 200°F (95°C) oven while you finish the rest.

Timing for two pieces per person

This recipe yields 12 slices (2 per person for 6 people). If serving more guests, scale ingredients proportionally, and cook in additional batches, keeping finished slices warm in the oven so the bar items remain hot and ready.

Toppings & Serving (set up French Toast Bar)

Prepare fruit: Rinse strawberries and blueberries. Hull and slice strawberries; place strawberries and blueberries in separate shallow serving bowls. If using bananas, slice and place in a small bowl with a squeeze of lemon to prevent browning.

Prepare chocolate chips and nuts: Place chocolate chips in a small bowl and toasted chopped pecans or walnuts (if using) in another bowl. Toast nuts in a dry skillet for 3–4 minutes over medium heat, stirring, until fragrant; cool before placing in serving dish.

Whipped cream and powdered sugar: If making whipped cream fresh, whip 1 cup heavy cream with 1–2 tbs powdered sugar and 1/2 tsp vanilla until soft peaks form; transfer to a piping bag or bowl. Put remaining powdered sugar in a small dish with a fine-mesh sieve or shaker for guests to dust their toast.

Syrup and butter: Warm maple syrup slightly (microwave 30–45 seconds or keep in a small saucepan on low). Place syrup in a pourable pitcher or dispenser at the bar. Put butter packets or small pats on a chilled tray with a butter knife or tongs.

Assemble the bar: Arrange the warm French toast slices on a large platter or chafing tray near the toppings. Label each topping if desired. Provide plates, forks, napkins and small serving spoons/tongs for each topping so guests can customize. Supply a small sifter for powdered sugar and a ladle or spoon for syrup.

Serving suggestion: Recommend two slices per person. Guests should add butter to toast, drizzle syrup, then finish with berries, a dollop of whipped cream, sprinkle of chocolate chips or nuts and a light dusting of powdered sugar.

Storage and leftovers: Store leftover cooked French toast in an airtight container in the refrigerator up to 3 days. Reheat in a 350°F oven for 8–10 minutes or in a toaster oven until warmed through and crisped. Do not leave perishable toppings at room temperature for more than 2 hours.
