Cake (if using prepared layers)

Level layers

If your cake layers have domes, trim the tops with a serrated knife so they are flat and stackable. Chill layers for 20 minutes to make filling and frosting easier to apply.

Chocolate Ganache (filling and optional drip)

Chop chocolate

Place finely chopped bittersweet chocolate into a heatproof bowl. Make sure pieces are small so they melt evenly.

Heat cream

In a small saucepan, heat 1 cup heavy cream over medium heat just until it begins to simmer and small bubbles form around the edge (do not boil).

Combine and emulsify

Pour the hot cream over the chopped chocolate. Let sit, undisturbed, for 2 minutes to soften the chocolate, then gently stir from the center outward until smooth and glossy. If using, whisk in 2 tbsp unsalted butter and 1 tsp light corn syrup for extra shine and spreadability.

Cool to spreading consistency

Let the ganache cool at room temperature, stirring occasionally, until it thickens to a spreadable consistency (~30–60 minutes depending on room temperature). For a firmer filling, chill in the refrigerator, stirring every 10 minutes, until it’s scoopable but still spreadable (~20–30 minutes chilled).

Berry Compotes (three quick compotes)

Prepare strawberries

In a small saucepan combine 1 cup hulled and halved strawberries with 1 tbsp granulated sugar, 2 tsp lemon juice and 1 tbsp water. Cook over medium-low heat until the strawberries break down, 6–8 minutes. Mix 1/3 tsp cornstarch with a small splash of water, stir into the compote and simmer 1 additional minute until slightly thickened. Remove from heat and cool to room temperature.

Prepare raspberries

In a separate small saucepan combine 1 cup raspberries with 1 tbsp granulated sugar and 1 tsp lemon juice. Cook over medium-low heat until the raspberries release their juices and soften, 4–6 minutes. If you prefer a smoother compote, press through a fine-mesh sieve to remove seeds; otherwise leave as is. Stir in 1/3 tsp cornstarch slurry (made with a splash of water) and simmer 30–60 seconds, then cool.

Prepare blueberries

In a third small saucepan combine 1 cup blueberries with 1 tbsp granulated sugar and 1 tsp lemon juice. Cook over medium heat until the berries burst and sauce slightly thickens, about 5–7 minutes. Stir in remaining 1/3 tsp cornstarch slurry if needed and remove from heat. Cool to room temperature.

Chocolate Buttercream

Beat butter

In the bowl of a stand mixer fitted with the paddle attachment (or using a hand mixer), beat 2 cups room-temperature unsalted butter on medium-high speed until light and fluffy, about 3–4 minutes.

Add dry ingredients gradually

Reduce speed to low and add 6 cups powdered sugar and 3 tbsp sifted cocoa powder in 2–3 additions to avoid a sugar cloud. Once mostly incorporated, add 6 tbsp heavy cream, 2 tsp vanilla extract and 1 tsp salt.

Whip to consistency

Increase speed to medium-high and beat for 2–3 minutes until the buttercream is smooth, fluffy, and spreadable. Adjust with 1–2 tbsp additional cream if too stiff, or 1/2 cup more powdered sugar if too loose.

Assembly & Decoration

Layer with ganache and compotes

Place the first cake layer on a cake board or stand. Spread a generous layer (about 1 cup) of cooled but spreadable chocolate ganache over the layer, leaving a 1/4-inch border to avoid overflow. Spoon 2–3 tbsp of one or a combination of berry compotes in the center, gently spreading but keeping a distinct pocket of compote. Repeat with the second layer: ganache then a different compote (or same, as you prefer). Place the third layer on top.

Crumb coat

Apply a thin layer of chocolate buttercream over the entire cake to seal crumbs (use about 1 to 1 1/2 cups). Smooth with an offset spatula and chill the cake in the refrigerator for 20–30 minutes until the crumb coat is firm.

Final frost

Apply a final thicker layer of chocolate buttercream to the chilled cake, smoothing the sides and top with a bench scraper and offset spatula. Reserve any extra buttercream for piping if desired.

Optional ganache drip

If you want a drip effect, warm a small portion (about 1/2 cup) of the ganache gently until pourable but not hot (microwave in 5–8 second bursts, stirring). Using a spoon or squeeze bottle, apply drips around the top edge, letting ganache fall down the sides. Smooth the remaining warmed ganache over the center or pipe a ring to enclose the berries.

Decorate with fresh berries and compotes

Spoon small amounts (1–2 tsp) of each cooled compote into the top center of the cake or create small pools around the edge. Arrange whole raspberries, blueberries, and quartered strawberries over the compote and along the cake top decoratively. Add chocolate shavings or curls and dust lightly with powdered sugar if desired.

Chill and serve

Chill the assembled cake for at least 30 minutes to set the ganache and buttercream. Remove from refrigerator 20–30 minutes before serving to allow the ganache and buttercream to soften for clean slices. Slice with a hot, dry knife (wipe between cuts) and serve.
