Prep

Crack the eggs into a medium bowl. Add the milk, salt, and black pepper. Whisk until combined and slightly frothy. Shred the pepper jack cheese, dice the ham, chop the bacon if not pre-chopped, slice or crumble the turkey sausage, and finely dice the onion and bell pepper. Have the butter and oil ready.

Cook aromatics & meats

Heat a 10-12 inch nonstick or cast-iron skillet over medium heat. Add the oil and 1 tablespoon of butter. When the butter stops foaming (about 30 seconds), add the diced onion and green pepper. Sauté until softened and translucent, about 3–4 minutes. Push the vegetables to one side and add the ham, bacon, and turkey sausage to the pan. Cook, stirring occasionally, until the meats are heated through and beginning to brown at the edges, about 2–3 minutes. Combine with the vegetables in the center of the pan.

Cook eggs

Reduce the heat to medium-low. Add the remaining 1 tablespoon of butter to the empty space in the pan and let it melt. Pour the whisked eggs evenly over the meat and vegetable mixture. Allow the eggs to set undisturbed for 15–20 seconds, then, using a silicone spatula, gently push the eggs from the edges toward the center to form large soft curds. Continue to gently fold and move the eggs every 10–15 seconds until they are mostly set but still slightly glossy and creamy, about 1.5–2 minutes total. Avoid over-stirring — you want soft, slightly custardy curds.

Add cheese & finish

When the eggs are almost fully set, scatter the shredded pepper jack cheese over the top. Fold the cheese into the eggs so it melts evenly, about 30 seconds. Taste and adjust seasoning if necessary (add a pinch more salt or pepper). Remove the pan from heat while the eggs still hold a little moisture; residual heat will finish cooking without drying them out.

Serve

Transfer the All Iowa Scramble to plates or a serving platter. Garnish with the chopped chives or parsley if using. Serve immediately with toast, breakfast potatoes, or a side of fruit. Yields 2–3 hearty servings.
