Blanch bones and optional oxtail/short rib: place bones in a large stockpot, cover with cold water, bring to a rapid boil for 8–10 minutes. Skim foam and impurities. Drain bones and rinse under hot water; clean the pot.

Char onion and ginger: while bones blanch, place halved onion and ginger cut-side down in a dry skillet over high heat or directly over a gas flame until well-charred, about 5–8 minutes. Set aside.

Toast spices: in a dry skillet over medium heat, toast star anise, cinnamon sticks, cloves, crushed cardamom, and coriander seeds until fragrant, about 2–3 minutes. Transfer to a spice sachet or wrap in cheesecloth.

Combine and simmer: return cleaned bones to the large stockpot. Add 5 liters (about 5 L) of fresh water, charred onion and ginger, toasted spice sachet, rock sugar, fish sauce, and coarse salt. Bring to a gentle simmer over medium-high heat, then immediately reduce to the lowest simmer — maintain tiny bubbles. Simmer uncovered for 3–4 hours for a clear, rich broth (6–8 hours if including oxtail/short rib for more gelatin). Skim any foam occasionally.

Finish and strain broth: about 30 minutes before finishing, taste and adjust seasoning with additional fish sauce or salt. Remove spice sachet, bones, and large solids. Strain broth through a fine-mesh sieve lined with cheesecloth into a clean pot. Keep hot, skim excess fat if desired, and hold at a gentle simmer until serving.

Beef Meatballs (Bo Vien)

Prepare meat mixture: in a chilled bowl, combine finely minced/ground lean beef and finely chopped cooked tendon or softened gelatin. Add cornstarch, dissolved baking soda, white pepper, sugar, salt, fish sauce, and ice water. Using a wooden spoon, chop-and-mix vigorously (or pulse carefully in a food processor) until mixture becomes pasty and sticky — this helps develop the springy texture typical of bo vien, about 3–5 minutes by hand or 30–45 seconds pulsing.

Form and poach meatballs: wet a tablespoon or small ice cream scoop and shape mixture into 1-inch (2.5 cm) meatballs. Bring a pot of water to a gentle simmer (not a rolling boil). Drop meatballs in batches to avoid crowding. Poach until they float and are cooked through, about 4–6 minutes depending on size. Remove with a slotted spoon and transfer to a bowl.

Optional sear for texture: for a bit of color, quickly sear poached meatballs in a hot skillet with a little oil for 30–60 seconds per side. Set aside and keep warm in the broth before serving.

Hold meatballs: keep finished meatballs warm by adding them to the strained hot broth or covering until assembly.

Noodles & Proteins

Prepare noodles: if using dried rice noodles, soak or cook according to package instructions (usually soak in hot water 20–30 minutes or boil briefly until tender). Drain and briefly rinse with hot water to loosen, then drain thoroughly. Arrange portioned nests for serving.

Prepare raw and pre-cooked beef: arrange thinly sliced raw beef and pre-cooked brisket/chuck on a plate, chilled. Keep refrigerated until ready to use so raw slices are very thin and will cook quickly when hot broth is poured over.

Reheat broth to a full rolling but clean boil just before assembling bowls. This ensures it will quickly cook the raw beef slices.

Garnish & Assembly

Portion noodles: place approximately 4 oz (by weight) of prepared rice noodles into each serving bowl (adjust to appetite).

Add proteins: arrange 3–5 beef meatballs (bo vien) per bowl, add a few slices of raw beef (about 2–3 slices) and any pre-cooked brisket if using.

Ladle broth: using a ladle held high, pour the rolling hot strained broth directly over the raw beef slices so they cook instantly (about 20–30 seconds). Fill each bowl with enough hot broth to cover noodles and proteins, about 3–4 cups per bowl depending on bowl size.

Finish toppings: sprinkle sliced white onion and green onions over the soup. Serve bowls immediately with a platter of bean sprouts, Thai basil, cilantro, lime wedges, sliced chilies, hoisin, and sriracha so diners can customize.
